Roasted Tomato Soup

Recently, I bought some pearl barley on an impulse, and then had to find something to do with it. The obvious choice? Soup!


1kg tomatoes

1 clove garlic, crushed

olive oil


bay leaves (also works with basil leaves)

75g pearl barley

325ml stock

1 large onion



Halve the tomatoes and place in a roasting tin. Sprinkle with thyme and garlic, drizzle with olive oil and tuck in the bay leaves.

Roast for about an hour, until the tomatoes are quite squishy.

Leave to cool for 30min.

Push the tomatoes through a sieve to create a purée. If there is less than 325ml, make up with extra stock.

Dice the onion & sautée in a large pan.

Add purée, 325ml stock and pearl barley, bring to the boil & simmer for about 30min.
