Lamb Steak & Crispy Potatoes

The other day, I ‘borrowed’ my mum’s Good Food magazine, and came across this lovely, simply recipe. I didn’t expect to be trying it out so soon afterwards, nor immediately after walking in at the end of a long day at work, but try it I did, and the result was more than satisfying.

Ingredients

lamb steaks

new potatoes

green beans

1 tbsp balsamic vinegar

1 tbsp olive oil

rosemary, chopped

1 clove garlic, “slightly bashed” (I’m not sure what Good Food counts as “slightly bashed” – I whacked mine with a wooden spoon a couple of times)

75ml lamb or beef stock

1 1/2 tsp redcurrant jelly

 

Instructions

Mix vinegar, oil and rosemary in a bowl. Coat lamb well in this marinade, and set aside.

Slice potatoes lengthways and boil until slightly soft.

Heat some oil in a frying pan, and saute the potatoes until golden.

Salt potatoes and push to the sides of the pan.

Fry lamb, 1-2 minutes on each side.

Remove lamb and potatoes to a warm place, keeping the pan on the heat.

Add stock to pan, and stir in the redcurrant jelly. Season to taste; add a dash of balsamic vinegar if it’s too sweet.

Blanche the beans.

Plate, serve and enjoy!
