Easy Tomato Pasta Sauce

Food Tech was always the best of the various technology lessons at school – an hour and a half of cooking, followed by eating the results. In Year 8, Food Tech taught me this recipe for a simple tomato sauce, which I now know by heart, and which can be used as a base for quite a lot of different meals.

Ingredients – serves 2-4

1 tin chopped tomatoes

1 onion, diced

1 clove garlic, crushed

1 tbsp tomato puree

1 tsp sugar

herbs de provence or oregano or basil


Sauté onion and garlic until golden. Pour in tomatoes, then add all the other ingredients. Boil for five minutes, and then simmer for (ideally) half an hour. (If you’re short on time, or patience, this can be cut all the way down to ten or fifteen – just be prepared for it to be a little watery.)

At this point, you can add other ingredients – meat, veg, cream, cheese, and so on – or use it as a basis for pizza topping. It even works okay in sandwiches, if you’re feeling that way inclined.
